Nestled in the picturesque Oberon region of New South Wales, Lowes Mount Truffiere stands as a testament to seventeen years of dedication to the art of truffle hunting. The truffiere, run by the local Roberts family, is not just a truffle haven but a place where enthusiasts can learn the nuanced skills of truffle dog training, guided by the noble-headed star, Fergus.

Fergus, a seasoned truffle dog with a sleek black coat and intelligent eyes, has been the pride of the Roberts family for years. His keen nose and strong bond with his handler, Karen Roberts, made him the perfect mentor for aspiring truffle hunters and their dogs.

One crisp winter morning last year, my late partner Matt and I, along with our enthusiastic (but untrained) labrador retriever Boris, joined a group of eager participants, united by a shared passion for earthy treasures hidden beneath the soil. Matt had long dreamt of training Boris to hunt for truffles, whereas I was more interested in the final result of smelling and eating the delicious morsels.

Greeting the group with a warm smile, Karen welcomed us to Lowes Mount Truffiere and promised a glimpse into the world of truffle hunting and the bond it fosters between owners and their beloved dogs.

The training began with basic scent detection exercises. Karen explained that training a truffle dog was a process that could take anywhere from six months to two years, emphasising the importance of patience and consistency. Fergus demonstrated this with ease, locating hidden truffles buried in the rich soil, his tail wagging with each successful find.

Matt and Boris were up next, trying their hand at the exercises. Boris was energetic and eager, but easily distracted by the myriad of scents in the truffiere, and as usual, had only just one thing on his mind – where was his next meal coming from? Karen reassured Matt that building a strong relationship with your dog is key, emphasising it’s all about trust and understanding.

Moving on to more advanced exercises, Fergus showcased his skills while the group watched in awe as he expertly navigated the truffiere, nose to the ground, finally stopping and digging gently at a spot. The dirt was carefully removed, unearthing a black truffle, its earthy aroma wafting through the air.

Black truffles have a unique scent and flavour. They can be earthy, woody, sometimes even chocolatey or garlicky, depending on the soil and the season. Later, we sampled fresh truffle honey, truffle salt and truffle-infused brie, the latter a died-and-gone-to-heaven experience worth the trip alone. Here’s a similar recipe you can try at home.

By the end of the day, Matt had a renewed sense of determination, while I remained more dubious about Boris’s career change. While Boris wasn’t a truffle dog yet, he’d had a great day out in the fresh air, exercising and socialising all the other wonderful dogs and their owners, as well as strengthening his bond and trust in us.
